To define a company's identity, it's important to ask ourselves where we come from, where we are, and where we want to go. The same goes for a culinary identity in the food and beverage sector. It involves taking into account food traditions, practices, ingredients, and cuisines that are closely linked to a specific culture, region, or community. Nature, people, and place play a decisive role in determining the values from which this culinary identity can be derived. Antje emphasizes the significance of plant-based cuisine as an essential building block that not only enhances the culinary experience but also the connection with nature.
